Founded by Yao-Yaowadee Chukong, a former temple kitchen escapee turned food activist, Maadae Slow Fish Kitchen is where Thai flavors meet a mission for better food systems.

Yao grew up dodging her mother’s curry critiques in Phatthalung but eventually found her rhythm in real, intuitive cooking. From Chiang Mai’s Bird Nest Café to Maadae, she’s stayed true to one mission: serve honest, seasonal food rooted in community.

Working with small-scale fishers in Chumphon, Maadae serves whatever the sea provides - no MSG, no shortcuts, just flavour that lingers. Her young kitchen team is trained to carry the slow food movement forward, one soulful dish at a time.

And if you’re lucky to catch one of Yao’s backyard music nights, you’ll get it.

detailed plans, having expectations on places, demanding that everyone speaks english, being totally disinterested in local culture, credit card being sucked into the atm, forgetting the airplane pillow, neck pain because you forgot the airplane pillow, tourist scammers, taking more photos than actual memories, feel FOMO if you realise you need to just take a break from traveling lol
